Single Serve Guacamole

This single serve guacamole is so easy to make and perfect for taco night or when you want just the right amount of dip for snacking on tortilla or pita chips.

This single serve guacamole is so easy to make and perfect for taco night or when you want just the right amount of dip for snacking on tortilla or pita chips. It’s also a great way to use up leftover avocado quickly before it’s too ripe!

When you’re cooking for one, avocados can be a challenge! We all know how quickly an avocado can go from rock hard to a squishy brown mess but the problem is, you don’t always want to eat a whole one in one sitting. So I’m always looking for ways to use up a quarter or a half of an avocado and this guacamole for one is perfect.

Single Serve Guacamole

I know some people are probably thinking “why would you make a single serving of guacamole? Just eat the whole thing!” but I can’t! It’s always too much and I hate that the leftovers go all brown so quickly no matter what I do. So I’m always very strategic with avocados so they don’t go to waste.

This recipe is super simple and uses up 1/2 an avocado but, you can easily double it if you want to make a simple guacamole with one avocado.  I find the 1/2 an avocado version makes just the right amount when for me when I’m making tacos for myself. I also find it’s perfect for when I want to snack on tortilla or pita chips while I’m chilling in the evening with Netflix.

Seasoning for Single Serve Guacamole

Seasoning dishes when you’re making them for one is always the trickiest part. You can easily over salt or use too much lime juice when you’re making a scaled down version of guacamole and quickly ruin it. So start with less than you think you need and taste test before you add more.

I love cilantro in my guac but if it’s not your thing, leave it out. Same with the garlic. I like my guacamole smooth and creamy but others like it chunky. You can change up the texture by adding different extras. Just see what you have in your pantry!

Here are a few extras you can toss in if you like:

  • chilies or chili pepper flakes
  • onions
  • tomatoes (get rid of the seeds so they don’t make the guacamole runny)
  • garlic
  • cilantro
  • diced red bell pepper
  • I also love adding Trader Joe’s Everything But the Bagel Seasoning

Double the Recipe if You’re Sharing with a Friend

If you’re having a friend or friends over for tacos, nachos or an evening of snacks and movies, you can easily double or even quadruple this recipe with no problems at all! That quantities are all easy to multiply so go for it!

Single Serving Guacamole

Ingredients

  • 1/2 large avocado
  • 1 clove garlic
  • 1 tsp chopped cilantro
  • 1 lime wedge (about 1/8 to 1/4 of a lime)
  • salt and pepper

Instructions

  • mash the avocado and garlic together in a bowl
  • add a generous sprinkling of salt and pepper
  • squeeze in the juice from the wedge and stir in with the chopped cilantro until the mixture is somewhat smooth (it should be a little lumpy)

Notes

Guacamole is very much about seasoning to taste.  When you're only  making one serving it's important not to over season or you'll ruin it quickly. A sprinkle is all you need. Start with just a dash of salt and pepper and give it a taste. If it needs a little more, sprinkle a little more in.
For a little extra heat you can add in a sprinkle of chili pepper flakes. For added texture or a little colour add a tbsp of diced red bell pepper.
